PANTA BHAT WITH FISH BHARTA
Ingredients:

5 pieces fish (any firm white fish)

1 tbsp turmeric powder

2 tbsp oil
-
1 small onion, finely chopped
-
2 small green chilies, finely chopped
-
1 pinch salt (adjust to taste)
-
1 cup rice (basmati or any long-grain)
-
1 cup water
-
1 medium tomato, finely chopped
-
1 handful cilantro (coriander leaves), chopped
Method:
1. Marinate the Fish

Coat the fish pieces with turmeric powder and salt. Let sit for 10 minutes.
2. Fry the Fish

Heat oil in a wok or pan over medium heat.

Fry the fish until golden brown on both sides (about 3-4 minutes per side). Remove and set aside.
3. Cook the Rice

In a pot, boil rice in 1 cup water until fully cooked (or follow package instructions).
4. Prepare Aromatics

Finely chop onion, green chilies, tomato, and cilantro.
5. Sauté Onions & Chilies

In the same wok, add more oil if needed.

Sauté the onion and green chilies until soft and fragrant (about 2-3 minutes).
6. Combine with Fish

Return the fried fish to the wok and gently mix with the onions and chilies.
7. Add Fresh Tomatoes & Cilantro

Toss in the chopped tomato and cilantro. Stir lightly and cook for 1 minute (tomatoes should soften slightly).
8. Serve Hot

Plate the spiced fish alongside the steamed rice.

Garnish with extra cilantro if desired.
