  1. DALIT STYLE SHUKTO

Ingredients:

  • 2 potatoes, peeled and chopped

  • 2 drumsticks, cut into pieces

  • 1 small pumpkin, peeled and chopped

  • 1 ridge gourd, peeled and chopped

  • 1 carrot, peeled and chopped

  • 1 raw banana, peeled and chopped

  • 3 green chilies, slit

  • 1 tsp turmeric powder

  • 1 tsp salt (adjust to taste)

  • 2 tbsp grated coconut

  • 3 tbsp oil (mustard oil preferred)

  • 1 cup water

Method:

  1. Prepare the Vegetables

    • Peel and chop all the vegetables into equal-sized pieces for even cooking.

  2. Start Cooking

    • Heat 2 tbsp oil in a large pan over medium heat.

    • Add turmeric powder and let it sizzle for a few seconds.

  3. Cook Potatoes & Ridge Gourd

    • Add chopped potatoes and ridge gourd to the pan. Sauté for 2-3 minutes.

  4. Cook Raw Banana Separately

    • In a separate small pan, heat 1 tbsp oil.

    • Add raw banana and green chilies. Sauté for 2 minutes until slightly tender.

  5. Combine All Vegetables

    • Add the remaining chopped vegetables (drumsticks, pumpkin, and carrot) to the first pan.

    • Mix well and cook for another 2 minutes.

  6. Season & Simmer

    • Add salt, grated coconut, and water.

    • Cover and cook on low heat for 10-12 minutes or until all vegetables are tender.

  7. Final Mix & Serve

    • Gently mix everything together, ensuring the vegetables don’t break apart.

    • Serve hot with steamed rice for a wholesome meal.

Tip: For an authentic touch, use mustard oil and adjust the bitterness by varying the amount of bitter gourd (if added).
