DALIT STYLE SHUKTO
Ingredients:
2 potatoes, peeled and chopped
2 drumsticks, cut into pieces
1 small pumpkin, peeled and chopped
1 ridge gourd, peeled and chopped
1 carrot, peeled and chopped
1 raw banana, peeled and chopped
3 green chilies, slit
1 tsp turmeric powder
1 tsp salt (adjust to taste)
2 tbsp grated coconut
3 tbsp oil (mustard oil preferred)
1 cup water
Method:
Prepare the Vegetables
Peel and chop all the vegetables into equal-sized pieces for even cooking.
Start Cooking
Heat 2 tbsp oil in a large pan over medium heat.
Add turmeric powder and let it sizzle for a few seconds.
Cook Potatoes & Ridge Gourd
Add chopped potatoes and ridge gourd to the pan. Sauté for 2-3 minutes.
Cook Raw Banana Separately
In a separate small pan, heat 1 tbsp oil.
Add raw banana and green chilies. Sauté for 2 minutes until slightly tender.
Combine All Vegetables
Add the remaining chopped vegetables (drumsticks, pumpkin, and carrot) to the first pan.
Mix well and cook for another 2 minutes.
Season & Simmer
Add salt, grated coconut, and water.
Cover and cook on low heat for 10-12 minutes or until all vegetables are tender.
Final Mix & Serve
Gently mix everything together, ensuring the vegetables don’t break apart.
Serve hot with steamed rice for a wholesome meal.

Tip: For an authentic touch, use mustard oil and adjust the bitterness by varying the amount of bitter gourd (if added).
